Marta Michulka at Chicago Illuminating Company likes to think big when it comes to that vast expanse of open space. You can even drive a car in there ...so we did!

Organic Irish Soda Bread
- 3 cups organic flour
- 1 Tablespoon baking powder
- 1/3 cup organic granualted sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cage free egg lightly beaten
- 2 cups organic buttermilk
- 1/ 4 cup organic butter melted
- 1 cup dried currants
Directions: Preheat oven to 350 degrees, grease a loaf pan
Combine dry ingredients together.
Separately combine egg, buttermilk, butter and currants and mix with dry ingredients.
Pour into pan. Bake approximately 60 minutes but test with toothpick until it appears clean.
Let cool. Best if eaten day of preparation but it makes delicious toast. |
